Cinnamon Swirl Bread

      I love toast for breakfast. Crisp, crunchy, buttery hot toast. Perfect with a a cup of coffee; . I love the way just the very top millimeter of toast crust softens up under its coat of melting butter. I like toast’s toasty aroma. I just  like TOAST.

     I decided to take my Toast to a new level ... added cinnamon , butter and sugar ...Yummy!
My first challenge was that I have to knead it by hand. and my second one was  my oven , which is small and gets really hot  with no way to control it !






Ah forgot to tell you , I had only 1.5 cups All-purpose flour so this was my third challenge !




Ingredients
  • 1 cup Milk
  • 6 Tablespoons Butter
  • 2-1/2 teaspoons Active Dry Yeast
  • 2 whole Eggs
  • 1/3 cup Sugar
  • 1 1/2 cups All-purpose Flour 
  • 2 cups Manitoba Flour , this was what I had on  hand .. if you can't find it , use All-purpose.
  • 1 teaspoon Salt
For the filling :
  • 1/3 cup Sugar
  • 2 Tablespoons Cinnamon
  • Softened Butter, For Smearing the loaf  And Greasing the pan . 
  • Egg And Milk, Mixed Together, For Brushing.

 Preparation Instructions

-Melt butter with milk. Heat until very warm. Allow to cool until still warm to the touch, but not hot. Sprinkle yeast over the top, stir gently, and allow to sit for 10 minutes. P.S it may not foam !
-Combine flour and salt.

-In a bowl , mix sugar and eggs with your hand mixer or even  a wooden spoon  until combined. Pour in milk/butter/yeast mixture and stir to combine. Add half the flour and beat  until combined. Add the other half and beat until combined.

 -If your  dough is overly sticky, add 1/4 cup flour and knead  for 5 minutes.
Heat a metal or glass mixing bowl so it's warm. Drizzle in a little canola oil, then toss the dough in the oil to coat. Cover bowl in plastic wrap and set it in a warm, humid place for at least 2 hours. I preheated my oven, turned it off  and put my bowl in it . <------- works best.

My fully risen dough , and this is what you will need for your filling . I sprinkled some flour on it , and don't ask me why !


-Turn  the dough out onto the work surface. Roll into a neat rectangle no wider than the loaf pan you're going to use, and about 30-40 cm  long. Smear with 2 tablespoons melted butter. Mix sugar and cinnamon together, then sprinkle evenly over the butter-smeared dough.

-Starting at the far end, roll dough toward you, keeping it tight and contained. Pinch seam to seal.

Smear loaf pan with softened butter. Place dough, seam down, in the pan. Cover with plastic wrap and allow to rise for 2 hours.

Before rising
2 hours after !

Preheat oven to 180 c 350 F.
Mix a little egg with milk, and smear over the top. Bake for 30- 40 minutes on a middle/lower rack in the oven.
