Parmigiana Towers

 


  Ciao, again with the parmigiana..I just can't stop twisting its recipes  according to my mood..today am gonna show you my (chic) version of parmigiana.  with every bite you will taste mozzarella,basil ,tomatoes ,parmiggiano cheese and of course eggplant...yummy.!


Ingredients:
2large eggplant, about 2 pounds
2 cups basic tomato sauce..recipe here
1 bunch fresh basil leaves
1 pound fresh mozzarella, sliced 1/8-inch thick
1/2 cup freshly grated Parmigiano-Reggiano
salt and pepper

How to make it:

Slice each eggplant into {discs}  about 1 inche thick. Lightly season each disc with salt and pepper and leave them for about 30-40 minutes .
after those thirty minutes...fry those eggplant slices with   a little amount of oil  for 2 minutes on each side on . and put them a side.


In an 8 by 12-inch baking pan, place the 4 largest eggplant slice evenly spaced apart.
Over each slice, spread 2 T of tomato sauce and add 2 basil leaves.
Place one slice of mozzarella over each and sprinkle with 1 teaspoon grated Parmigiano.
place another slice on top and repeat til you get the preferred height.
bake uncovered until the cheese  melts and the tops turn light brown, about 20 minutes.
Garnish with fresh basil leaves.
Serve immediately.
