Lemon -scented Cornbread Doughnuts












Prepare your dry ingredients

Prepare your wet ones

Your batter.. after adding wet to try ingredients




Pour your batter into a plastic bag , snip its end with  scissors and grease your pan




Fill it ( half full ) only !


e VoilĂ  , after 8 minutes in my oven !!!



Prep Time: 10 mins  Cooking Time: 5 mins

Ingredients:
2/3 cup yellow cornmeal
1/3 cup all purpose flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
pinch of salt
1 egg (lightly beaten)
1  container of non fat yogurt around a cup.
1 tablespoon canola oil
2 teaspoons lemon juice
3 tablespoons granulated sugar
2 to 3 tablespoons butter. for greasing your pan.

Preheat the oven to 180  degrees C . In a large bowl whisk together all the dry ingredients. In another bowl stir together oil, lemon juice, egg and yogurt. Make a hole in the center of the dry ingredients and pour the wet ingredients into the hole. Gently fold everything together until combined.grease each cavity of the doughnut pan with some butter . Place half the batter in a small plastic bag and seal it. Cut a small hole in the corner of the baggie and pipe batter into the doughnut cavities on top of the butter. Only fill each cavity 1/2 way and before baking be sure to clean off any stray dough around the circle so there’s a hole in the middle of the doughnut.. for regular sized donuts cook fro 8 to 10 minutes. Let cool for a moment and then flip over onto a cooling rack while still warm.

Lemon Ricotta Muffins


                  It was my very first time to  use olive oil in  desserts ...strange ,yet true!!
But they came out awesome . One of the most moist  and silky muffins I've ever made.





Ingredients:  
  Partially inspired from gastronomy

  • 7 9/10 ounces all-purpose flour (1 3/4 cups)
  • 3/4 cup granulated sugar
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup ricotta cheese
  • 1/2 cup water
  • 1/4 cup olive oil
  • 1 tablespoon grated lemon rind
  • 2 tablespoons fresh lemon juice
  • 1 large egg, lightly beaten
  • Cooking spray
Procedure:
*Preheat oven to 375°. Weigh or lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 3 ingredients(except sugar); make a well in center.

*Combine ricotta and next 5 ingredients (through egg). Add ricotta mixture to flour mixture, stirring just until moist.




*  Add the lemon rind to your sugar then rub them between your fingers .


* Add the dry ingredients to the wet batter.
*Place 12 muffin-cup liners in muffin cups; coat with cooking spray. Divide batter among muffin cups.  Bake at 375°, 180 c for 16 minutes or until a wooden pick inserted in center comes out clean. Cool 5 minutes in pan on a wire rack.


  To make the glaze combine 2 ts of lemon juice with 1/4 cup of powdered sugar , mix well and drizzle on your muffins ..Yummmy!

Sticky Lemon Rolls




  Have you ever heard of something more delicious than a freshly baked cinnamon rolls??

yes, there is. those  lemon babes are heavenly GOOD.!!
especially that lemon in summer is very refreshing ..:)
let's get baking.

Lemon Roll Dough
3 lemons
1 envelope (0.25 ounces, or 2 1/2 teaspoons) active yeast

3/4 cup milk, warmed(warm but not hot on your wrist)
1/2 cup (1 stick) unsalted butter, very soft
1/4 cup white sugar
2 teaspoons vanilla extract
4 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon nutmeg
2 eggs
Sticky Lemon Filling
1 cup sugar
1/4 teaspoon freshly-ground nutmeg
1/2 teaspoon powdered ginger
3 tablespoons unsalted butter, very soft
Lemon Cream Cheese Glaze
4 ounces cream cheese, softened
1 cup powdered sugar

Make the dough:
Zest and juice the lemons. Divide the zest into three parts. Divide the juice into two parts, and set aside. (Half of the lemon juice will be used in the lemon-sugar filling for the rolls. The other half will be used in the glaze.)
In the bowl of a stand mixer sprinkle the yeast over the warmed milk and let it sit for a few minutes. With the mixer paddle, stir in the softened butter, sugar, vanilla, and one cup of the flour. Stir in the salt, nutmeg, and one part (1/3) of the lemon zest. Stir in the eggs and enough of the remaining flour to make a soft yet sticky dough.
Switch to the dough hook and knead for about 5 minutes, or until the dough is elastic and pliable. (If you do not have a stand mixer, stir together the ingredients by hand, then turn the soft dough out onto a lightly floured countertop. Knead the dough by hand for 5 to 7 minutes, or until the dough is smooth, pliable, and stretchy.)
Spray the top of the dough with vegetable oil, and turn the dough over so it is coated in oil. Cover the bowl with plastic wrap and a towel and let the dough rise until nearly doubled — about an hour.
Make the filling:
In a small bowl, mix the sugar with the nutmeg and ginger, then work in the second part of the lemon zest (1/3) with the tips of your fingers until the sugar resembles soft sand. Slowly pour in one part of the lemon juice, stirring. Stop when the sugar and lemon juice form a wet, clumpy mixture. (You may use all of the reserved half of the lemon juice; you may stop before completely adding that half of the lemon juice.)

Assemble the rolls
Lightly grease a 13x9 inch baking dish with baking spray or butter. On a floured surface pat the dough out into a large yet still thick rectangle — about 10x15 inches.
Spread the dough evenly with the 3 tablespoons of softened butter, then pour and spread the lemon-sugar mixture over top. Roll the dough up tightly, starting from the top long end. Stretch and pull the dough taut as you roll, to keep the lemon sugar firml inside. Cut the long dough roll into 12 even rolls. Pinch the bottom of each roll closed and place each one, open and cut side up, in the prepared baking dish.
Cover the rolls with a towel and let them rise for an hour or until puffy and nearly doubled. (You can also refrigerate the rolls at this point. Cover the pan tightly with plastic wrap, and place it in the refrigerator for up to 24 hours. When you are ready to bake the rolls, remove the pan from the fridge, and let them rise for an hour.)
Heat the oven to 350°F. Place the risen rolls in the oven and bake for 35 minutes or until a thermometer inserted into a center roll reads 190°F.
Make the glaze:
While the rolls are baking, prepare the glaze. with a whisk  whip the cream cheese until light and fluffy. Add the remaining lemon juice and blend until well combined. Add the powdered sugar and blend until smooth and creamy.
Finish the rolls:
When the rolls are done, smear them with the cream cheese glaze, and sprinkle the final remaining lemon zest over top to garnish. Let cool for at least 10 minutes before serving, but do serve while still warm.

Lemon Bars Made Easy

   


   Lemon lemon and lemon again.. lemon bars...my favourite of all times, easy , yummy and quick..
I prefer to eat them with my tea with mint..have you ever tried tea with mint ?? they are also very yummy with a cup of coffe or just with some juice for kids..

Ingredients:

The crust:
1/2 cup  unsalted butter, room temperature. cut into small cubes.
1/4 cup confectioner's sugar
1 cup  all purpose flour
1/8 ts salt.

What to do:

* Preheat you oven to 350 degrees F
* place the oven rack in the center of the oven.
 *spray with a non stick vegetable spray, an 8 x 8 inch (20 x 20 cm) pan.



                                                Pulse in food processer to cream the butter


                                 Add the flour and pulse again till you get a dough resembles a coarse cornmeal

                                                                      Your crust

Bake until slightly golden brown ( about 15 minutes) meanwhile prepare your filling.
then let it cool on a wire rack. till warm.

The Filling:




In the bowl of your electric mixer beat The sugar and eggs till mixed then add the lemon juice and zest and the 2 TS of flour.

while the crust is still warm pour your filling into it,bake for another 20 minutes or till the filling sets.
To serve ,cut into bars and dust with confectionar sugar or just eat them as they are. Enjoy!

Ultimate Lemon Cake

   Actually this cake should've been made in the middle of August...I can hear you asking , why August!!!
simply because it is veryyyy refreshing and I can say it is MOOD ELEVATING too.
It stimulates your taste buds and fills your mouth with Lemon and  much more.....:)

All you will need for the  cake and its syrup is in this pic.+ 2 tsp lemon zest.
     
 Ingredients


  • 1 1/2 cups all-purpose flour , sifted.
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup plain whole-milk yogurt
  • 1  cup sugar
  • 3 extra-large eggs
  • 2 teaspoons grated lemon zest (2 lemons)
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup vegetable oil
  • For the Lemon Syrup:
  • 1/3 cup Lemon juice
  • 1/3 cup sugar.
      What to do:
PREHEAT THE OVEN TO 180 c.
1-In a bowl of the electric mixer mix together ( yogurt+ sugar +lemon zest)    
2- Add your eggs one at a time, and mix.
3- In another bowl mix all dry ingredients.
4- Whisk the dry ingredients into the wet ingredients.
5-With a rubber spatula, fold the vegetable oil into the batter, making sure it’s all incorporated.
6- Pour the batter into the prepared pan(greased and floured)and bake for 40 minutes.
7-Add the 1/3 cup lemon juice to the   1/3 cup sugar in a small pan stir until the sugar dissolves and the mixture is clear – set aside.
8-When the cake is done, allow it to cool in the pan for 10 minutes. Carefully place on a baking rack over a sheet pan. While the cake is still warm, pour the lemon-sugar mixture over the cake and allow it to soak in. 9-Cool the cake.


                       

Optional:
Lemon Glaze:1 cup  confectionar sugar + 2 tsp freshly squeezed lemon juice. and pour over the cake.
