Gnocchi Fritti

   Verona....a beautiful city in north Italy, I've been there two weeks ago ..visited (la casa di julietta ) Juliette House and  took a photo just under her balcony which witnessed the legendary love story ...ROMEO &JULIETTE ...Sigh!!!

   Back to our gnocchi fritti...I ate them there and was a lovely treat.
it is a type of fried   dough..which can be a type of dessert or  you can simply stuff it with salami or cheese..Yummmmy !



Let's see how easy is it..

Ingredients

  1.      Water 180 mL( warm)
  2.      Flour   500 gr
  3.      Brewer's yeast  12 gr   (half a cube) 
  4.    Salt 10 gr
  5.     margarine 70 gr 
  6. . Sugar 1 teaspoon
  7.  
Preparation:

To prepare the( fried dumplings), a bowl, crumble in the yeast, add the teaspoon of sugar then add 50 ml of warm water(from the total amount): Melt the yeast, stirring well with a spoon.
then add 2 tablespoons of flour ,to form a very soft batter  which let it rest for half an hour. After the half hour add the remaining flour in a large bowl and add the batter.

add your margarine ,add your  10 grams of salt in about 125 ml of warm water , when the salt is dissolved pour all the water inside the bowl and begin kneading
When the liquid has been completely incorporated into the  flour , transfer the dough on a floured board and knead until it becomes smooth and homogeneous , so keep the dough forms a ball, and cross-slit  it.

  place your dough in a large bowl that you have previously oiled , seal the bowl with plastic wrap . Let rise for about 2 hours in a warm place. until the dough has nearly tripled the volume.

After the time necessary, remove the dough and knead on a floured surface. and roll it out into a sheet  about 3 mm , with a cutter blade  cut your gnocchi  squares of 8-10 cm wide ....or as small or big as desired .

Now make a pot, with plenty of oil and let it warm up (19).
Dip a few gnocchi at a time in 'oil  fry, remove them with  and put the fried dumplings to dry on a paper towel to remove' excess oil.
Serve your fried dumplings still hot with a nice platter of mixed sausages, bacon and some cheese with which you are going to fill them after they have been cut in half .... Enjoy!

Phenomenal Cipollini

   Voilá.....an easy appetizer recipe,tastes sugary,no sour....am confused,it is a sweet and sour balsamic -glazed onions, but not an ordinary onions it is CIPOLLINI..

What is Cipolline?
  It is an Italian pearl onion known for its flat, saucer-like shape. Previously produced only in Italy, these unusual and elegant onions are now grown all over the globe ,Our cipolline range from 1" to 3" in diameter . The taste of cooked cipolline is uniquely mild and sweet.(Cipollini is the plural of ciplolline).
Ingredients
                                                                      1 pound cipollini
                                                               2 tablespoons virgin olive oil
                                                                   2 tablespoons sweet butter
                                                                     1 tablespoons sugar
                                                                 1/2 cup balsamic vinegar
                                              1/4 cup tomato sauce . I used Marinara sauce (homemade)
                                                                         1/2 cup water
                                                     1/2 teaspoon chopped fresh rosemary leaves

                                                                               How to?
                                                                    peel and clean onions
                                                        heat butter and oil in large sautee pan,add onions
                                  Saute until light golden brown on all sides, about  10 minutes.
                                     Add sugar, vinegar, tomato sauce and water and bring to a boil.
                                                 Cook onions  covered until just al dente


                                 Remove from saute pan to a serving dish and hold in a warm place,
                                or allow to cool if you are serving them later or as an antipasto. Sprinkle                                                                               with  rosemary   .

Sunset Salad

  It's been really a very tiring week and it is finally Saturday..Thank God it is Saturday...it doesn't mean that am working all week or anything, am a housewife :( and a mom of TWO:) ,today in Bologna is pretty hot and I wanted to eat something really refreshing and in the same time didn't wanna cook.;) so I've decided to make this new salad, it is new for me at least....I love italian rucola it is really heavenly good with balsamic vinegar..Yummy..Rucola or Arugula is an aromatic salad green. It is also known as rocket, roquette, rugula and rucola, and is popular in Italian cuisine,Like most salad greens, Arugula is very low in calories and is high in vitamins A and C. A 1/2 cup serving is two calories..I even growing my own now in the balcony!!

About the aceto balsamico or balsamic vinegar...it is originally made in Modena..a city not far from bologna where I live, you can find all about it here.
back to our salad...let's get to work.



Tossing the balsamico...Yummy.


Ingredients:
2 tomatoes. ripe but a bit hard.,diced
1 onion,diced
1 cup rucola
3Tsp canned sweet corn
1/2 a cup of your favourite cheese, I used Emmental ,you can use parmiggiano or cheddar.,diced
extra virgin olive oil, 2 TSp
Balsamic vinegar 2TSp
salt and freshly ground pepper.
Pinch of sugar.






How To:

In a large bowl, put the sweet corn  kernels and stir in tomatoes ,onion and rucola.
Add the cheese,toss with and oil ,,,right before serving add the salt and pepper,and a teeny tiny pinch of sugar. anf of course Vinegar. Enjoy.!!

La polpetta perfetta (Italian meatballs)

The first taste of this delightful italian polpette from the italian cuisine is enough to addict you to it for life! The most important ingredient in italian polpette is beef. Italian polpette makes a yummy main dish. You will fall head over heels in love with this easy and delectable italian polpette recipe as soon as you try it!


 THAT IS ALL WHAT YOU WILL NEED EXCEPT FOR THE GRAPES!!!!!

























Ingredients:



What To do:
Mix all the ingredients  and form it into balls the size of large walnut.
refrigerate for 1 hour before cooking.
Brown the polpetta in a pan with 3 TS olive oil..and after it is nice and golden put it into the preheated oven for about 10 minutes.

Use the same pan where you cooked the polpetta for cooking some grapes , yes grapes :))) for about 2 minutes.

WELL IT IS TIME TO SERVE...BUT HOW??

 DIPS:

*as long as we are in August...and it is really hot in Italy...I used yogurt and mint dip
1½ cups plain yogurt (you can use low-fat)
1 cup  fresh mint leaves, finely chopped
3 to 4 cloves garlic, peeled and finely minced
½ teaspoon salt
½ teaspoon freshly ground black pepper
















* Tomato and Basil dip:
Ingredients:  
400g freash peeled chopped tomatoes
3 tbsp sun dried tomato paste (45g)
1/2 cup basil,chopped
Add the tomatoes, tomato paste and 150ml water and cook for 10 minutes, stirring occasionally. Stir in the basil.salt and pepper...and serve.
