Mushroom & Ricotta Pie

Where do I begin !
I invented this recipe and it came out ...super yummy!
Let's get to the ingredients...

  • You will need :
  • 1 recipe ready-made pie crust.
  • 200 gm ricotta cheese
  • 1 egg
  • 3 TB milk.
  • 50 gm parmigiano regiano cheese 
  • 6 large fresh mushrooms, cleaned and sliced
  • one onion, sliced
  • fresh and dried herbs of your choice.
  • spring onions , the green parts.
 How to :
  •  Preheat your oven to 180 c
  • Blind bake your pie crust, in case  you don't know how to watch this video
  • I skipped that step above :)
  • sautee your pnions with the mushrooms until tender
  • mix your cheese with the egg and milk
  • add some salt and pepper,
  • put the mushroom onions mix on the pre-baked pie crust 
  • add your cheese mix and herbs.
  • bake for another 30 minutes.
  • Enjoy !
Basic Pie crust:


  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup shortening, chilled
  • 3 tablespoons ice water


  1. Whisk the flour and salt together in a medium size bowl. With a pastry blender, cut in the cold shortening until the mixture resembles coarse crumbs. Drizzle 2 to 3 tablespoons ice water over flour. Toss mixture with a fork to moisten, adding more water a few drops at a time until the dough comes together.
  2. Gently gather dough particles together into a ball. Wrap in plastic wrap, and chill for at least 30 minutes before rolling.
  3. Roll out dough, and put in a pie plate. Fill with desired filling and bake.
