Lemon Bars Made Easy

   


   Lemon lemon and lemon again.. lemon bars...my favourite of all times, easy , yummy and quick..
I prefer to eat them with my tea with mint..have you ever tried tea with mint ?? they are also very yummy with a cup of coffe or just with some juice for kids..

Ingredients:

The crust:
1/2 cup  unsalted butter, room temperature. cut into small cubes.
1/4 cup confectioner's sugar
1 cup  all purpose flour
1/8 ts salt.

What to do:

* Preheat you oven to 350 degrees F
* place the oven rack in the center of the oven.
 *spray with a non stick vegetable spray, an 8 x 8 inch (20 x 20 cm) pan.



                                                Pulse in food processer to cream the butter


                                 Add the flour and pulse again till you get a dough resembles a coarse cornmeal

                                                                      Your crust

Bake until slightly golden brown ( about 15 minutes) meanwhile prepare your filling.
then let it cool on a wire rack. till warm.

The Filling:




In the bowl of your electric mixer beat The sugar and eggs till mixed then add the lemon juice and zest and the 2 TS of flour.

while the crust is still warm pour your filling into it,bake for another 20 minutes or till the filling sets.
To serve ,cut into bars and dust with confectionar sugar or just eat them as they are. Enjoy!
