Egyptian Red Lentil Soup

     Of course all of us made all types of " orange-colored " soups. Pumpkin soup, carrot cream soup... but have you ever tried  Egyptian Red Lentil  soup??
It is colorful , delicious and really can warm you up even it is freezing out there !  






      First put your pot on medium high heat , add your butter , onions and garlic , sautè them a little.


                                                                 Add your carrots  , give it a stir

               
                          And Last but not least , your lentils together with the crushed tomato.
            Finally ,add your chicken stock and  simmer for about 15 minutes or until your lentil is so tender..


                                           And here goes your hand mixer ,,,,, Enjoy!!!



Ingredients : ( 4 servings)
1 1/2 C red lentils  , washed .
1 large tomato peeled and crushed.
1 large onion peeled and chopped roughly
2 medium sized carrots chopped
2  garlic cloves cut into small pieces
1 ts  turmeric powder
1 ts cumin
Salt and pepper
4 cups  of chicken stock (HOT)
2 T butter.

Serving ideas ..
Top with yogurt, onion, mint, parsley, or cilantro. I put crème fraiche  on mine.. :))
 



Zuppa di Lenticchie Rosse

Ingredienti

  • 200 grammi di lenticchie rosse
  • Una cipolla trittata
  • uno spicchio d’aglio
  • Una carota trittata
  • 100 grammi di polpa di pomodoro
  • 600 ml di acqua o brodo o qb.
  • una foglia di alloro
  • un cucchiaino di semi di cumino
  • sale e pepe qb.
  • un peperoncino piccante secco (opzionale)
  • 2 cucchiai di Olio d'oliva, burro o ghi ( tipo di grasso Egiziano)
  • 1 cucchiaino di curcuma

Preparazione

Consigli
Servirla in una bella ciotola fonda, aggiungere del peperoncino tritato, prezzemolo (o panna), una spruzzata di limone e una bella fetta di pane tostato.
