Apple Coffee Cake

  It is officially fall here in Italy, and the apple . No, this is not the real reason I made this cake actually I wanted to make or re-make the nectarine upside down cake I made yesterday but I ran out of nectarine; that's why I used my apples.. and it turned out absolutely delish!!!

The term coffee cake can refer to any of the following:

  • A class of cakes intended to be eaten alongside coffee (for example, as part of a breakfast meal) or that may be eaten during a "coffee break" or offered to guests as a gesture of hospitality on or around a coffee table. Under this definition, a coffee cake does not necessarily contain coffee. They are typically single layer cakes that may be square or rectangular like a Stollen or loaf-shaped rectangular cakes, or they may be ring shaped. Coffee cakes may be flavored with cinnamon or other spices, seeds, nuts and fruits. These cakes sometimes have a crumbly or crumb topping called streusel and/or a light glaze drizzle. Some similarity to teacakes may be found, though teacakes are often smaller individual items served with tea.
  • A cake, often sponge cake, which is made with coffee or has a coffee flavor.




First of all prepare this:

You will need an apple, flour, Baking powder, brown sugar, butter,  an egg, yogurt and vanilla extract


Peel and slice your apple


Add to them  2 TB brown sugar mixed with 1/2 ts cinnamon


Cream your butter with your sugar


Now, add your egg and mix


start adding your flour alternating with yogurt till both finish


your batter should look like that!


Now, the fun part... add half the batter in your pan and spread it evenly 

Start adding your apple slices






Now add the rest of the batter and BAKE!

e Voilà !



Apple Coffee Cake


You will need :
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 stick unsalted butter, softened
  • 2/3 cup plus 1 1/2 tablespoons brown sugar , divided
  • 1/2 teaspoon pure vanilla extract
  • 1 large egg
  • 125 gm Greek yoghurt or butter milk
  • 1 large apple, sliced and peeled,1/2 teaspoon cinnamon and 1 TB brown sugar .


How to:
  •  Preheat oven to 400°F, 180 c, placing the rack in the middle. Butter and flour a 9-inch round cake pan and keep ready. or use a comfort silicon pan like mine, I love it!
  • Whisk together the flour, baking powder, baking soda, and salt.
  • Beat butter and 2/3 cup sugar with an electric mixer at medium-high speed until pale and fluffy; this should take about 3 minutes, then beat in the vanilla. Finally add the egg and beat well for another 2 minutes.
  • Switch the mixer setting to low speed, mix in flour mixture in 3 batches, alternating with buttermilk or yogurt, beginning and ending with flour, and mixing until just combined. Remember, do NOT over-beat.
  •  Spoon half the prepared batter into the cake pan, add your apple  then spoon the rest of your batter.
  • Bake until cake is golden and a wooden pick inserted into center comes out clean, roughly about 25 to 30 minutes. Cool in the cake pan for 10 minutes, then turn out onto a wire rack and allow to cool completely. Invert it onto a serving plate.
  • By the way, this cake tastes just like a good-soft- apple pie.Yummm :)

A quick hint this cake best served when hot, heat it up a lil in a microwave.. add a scoop of vanilla ice-cream on top and ENJOY!

(Apple Pie) Torta Di Mele

                                                    Torta di mele (Apple pie)

ingredients:

(The pie crust)

300 g flour ( about 2.5 cups)

150 g of butter (very cold)

100 g of ice water .. I recommend it!

a pinch of salt.

  • Put the flour into the bowl of a food processor with the salt.

  • Add the cold butter into small cubes and pulse at high speed for about 30 seconds.

  • Pour slowly opening the lid, a little cold water continuing to blend on low speed.

  • The dough should gather into a ball. knead quickly (not to heat the dough with your hands) on a floured work surface.

  • Wrap the dough in plastic wrap and store in refrigerator for 30 minutes before use.

  • If you do not have the food processor, mix together all ingredients in a bowl, working with your fingertips (not always heat the dough).

The filling:

800 grams of apples , peeled and cut into a bit thin slices

60 grams of sugar ( 4 Tablespoons)

2 TB of corn starch

Half a teaspoon of cinnamon powder

Half a teaspoon of nutmeg powder (not required)

1 TB juice lemone.

1 egg. --->??

How to :

  • Add the sugar, and spices in a bowl Use your hands and mix the apples.
  • Add the lemon juice and let it set for about 10 minutes.
  • Add the cornstarch and mix well.
  • Take the pie crust  from refrigerator, roll it in half and divide it into two parts  a portion of the dough on the bottom of a baking dish. add  the apple mixture, sprinkle with lots of butter flakes. 
  • Now put the other half of the dough above the filling. and decorate!
  • Preheat oven to 200 c -----> important.
  • Mix the egg with a little water in small bowl. brush the top with beaten egg. make a cross at the top to allow steam to escape.
  • Bake until the crust begins to brown, about 20 minutes, then reduce heat to 180 ° c. Tent the rims with aluminum foil or a pie protection if the edges are browning too quickly. and bake for about 35 minutes more.
  • Apple pie is great if served with vanilla ice cream or whipped  cream.

Ingredienti:

(La pasta briseè) 

g 300 di farina .

g 150 di burro (molto freddo)

ml 100 di acqua ghiacciata..mi raccomando !!

un pizzico di sale .

 

    Mettete la farina nella coppa di un robot da cucina  con il sale.
    Unite il burro freddissimo a dadini piccoli e azionate ad alta velocità per circa 30 secondi.
    Versate a filo dall'apertura sul coperchio poca acqua gelata continuando a frullare a bassa velocità.
    L'impasto si dovrebbe raccogliere a palla. Prelevatelo e lavoratelo rapidamente (per non scaldare la pasta con le mani) su una piano di lavoro infarinato.
    Avvolgete la pasta in pellicola trasparente e riponete in frigo per 30 minuti prima di usarla.
Se non avete il robot da cucina, impastate insieme tutti gli ingredienti in una ciotola, lavorando con la punta delle dita(sempre per non scaldare la pasta).
Il ripieno:
    800 grammi di mele
    60 grammi di zucchero
    2 cuchiai di amido di mais
    Mezzo cucchiaio di cannella in polvere
    Mezzo cucchiaio di noce moscata in polvere ( non è necessario )
    1 cuchiaio di succo di lemone .
1 uovo .--->???

Unire lo zucchero,  e le spezie in una ciotola  Usate le mani e mescolare le mele .

aggiungere il succo di limone e lasciate in posa per circa 10 minuti.

aggiungere l'amido di mais e mescolare bene.

prendiamo la pasta briseè  dal frigo, dividiamola a metà  e stendiamo una parte dell’impasto sul fondo di una teglia . Poniamo all’interno della pasta il composto di mele cospargendolo con tanti fiocchi di burro.
Sulla superficie del dolce posizioniamo l’altro disco di pasta .


Preriscaldare il forno a 200 c

Mescolare l'uovo  con  un pò d'aqua  in piccola ciotola . spennellare la superficie con il uovo sbattuto. fare una croce nella parte  superiore per permettere al vapore di fuoriuscire.

  Cuocerla fino a quando la crosta comincia a imbiondire, circa 20 minuti, poi ridurre il calore a 180 ° c. Tenda i cerchi con un foglio di alluminio o di una protezione torta se i bordi sono rosolino troppo in fretta. e cuocere per circa 35 minuti di piu.

La Apple pie è ottima se servita accompagnata da gelato alla vaniglia o alla crema.
