Macarons-like Meringue Cookies





Meringue Cookies ... challenging right? from oven temprature to choosing your eggs  , passing by humidity and so on .. I can go on for ever .
In theses babes , there is nothing to worry about, the almond flour will prevent  em from collapsing and you will have a macarone - like delicious cookie that melt immediately in your mouth ... yummmmmmy!
 It was a friend's baby shower party and I decided to make a pinkish treat ... everyone loved em and they were gone in seconds ... literally!
But to be clear, those are macarons meringue cookies .

Ingredients
1 cup confectioners’ sugar, 4.5 oz
3/4 cup almond flour, 2.5 oz.
2 large egg whites, room temperature ( older eggs hold air better, and take them from the fridge the day before or the morning of and let them sit there happily on the counter and warm to room temp)
Pinch of cream of tartar, to hold your meringue better.
1/4 cup superfine sugar, 1.5 oz. (also called baker’s sugar)
Food coloring



Method:
 Partially inspired from not so humble pie

1.Pulse confectioners’ sugar and almond flour in a food processor until combined. better than sifting it ,right?
 2. Whisk whites with a mixer on medium speed until foamy. Add cream of tartar, and whisk until soft peaks form. Reduce speed to low, then add superfine sugar. Increase speed to high, and whisk until stiff peaks form (3 to 5 minutes). If you’re going to add color, do so near the end of your whipping.
3. Sift flour mixture over whites, and fold until mixture is smooth and shiny. The amount of folding is crucial. Fold too little, and your macaron shells will have peaks instead of nice rounded caps. Fold too much, and your meringue will drip into a mess of wafer-thin blobs. Tartlette recommends about 50 folds, until your batter has a magma-like flow for macarons, and here also it is ok to follow her path.

 4. If the batter forms a round cap but doesn’t run, it is just right. When spooning the batter into the pastry bag, the perfect batter will start to just ooze out of the tip once the bag is full !

5.Transfer batter to a pastry bag fitted with a 1/2-inch plain round tip. Lin your baking sheet with parchment paper ( I recommend a heavy bottomed sheet ). to let them cook evenly.

6. Pipe 3/4-inch rounds 1 inch apart on parchment-lined baking sheets. Put the tip right in the middle of where you want each cookie  and let the batter billow up around it, then drag the tip to the side of the round. (You can pipe 1-inch to 2-inch rounds, but you will need to add cooking time). Tap bottom of each sheet on work surface to release trapped air. Let stand at room temperature for 30 minutes while you preheat your oven to only 140 c.

7. Bake for 8 minutes and rotate half way .. Let your cookies  cool on sheets for 2 to 3 minutes, then transfer to a wire rack.and you are done!

You can sandwich em if you like .. Nutella or butter cream would be perfect !

Christmas and Wedding cookies



    Dear readers.. how have you been ? missed you.

I've been cheating on blogging with medicine :) today, am gonna show you some of my favorite cookies recipe and some photos ..hope you like them. Here you go.




Sugar cookies recipe:
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract or lemon extract.

Directions

  1. Preheat oven to190 degrees C . In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
  2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

Biscotti Di Natale

Ingredienti

  • 350 gm di farina 00
  • 1 cucchiaino lievito in polvere
  • 250 gm burro in temperatura ambiente
  • 300 gm zucchero
  • 1 uovo
  • una bustina di vanillina
  • un pizzico di sale
  • Per la glasse veloce:
  • 80 gm di zucchero a velo
  • 2 cucchiai d'acqua
  • coloranti alimentare
  • confetti colorati

Chocolate chip Cookies




Adapted from The carrot
Servings: approximately 30 cookies
Ingredients
1 and 1/2 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
8 tablespoons (1 stick) unsalted butter, melted and cooled
1/2 cup granulated sugar
1/3 cup packed light brown sugar
2 tablespoons light corn syrup
1 large egg yolk
2 tablespoons milk**I used whole milk, because that is what I had on hand
1 tablespoon vanilla extract
3/4 cup semisweet chocolate chips


How to :
1. Preheat the oven to 375 degrees.
2.  Line your cookie sheets with parchment paper or spray generously with cooking spray.
3. In a medium bowl, whisk together the flour, baking soda, and salt.
4. In the bowl of your standing mixer fitted with the paddle attachment, mix the butter, granulated sugar, brown sugar, and corn syrup together on medium speed for about 1 minute.
5.  Add the egg yolk, milk, and vanilla, mixing well until combined, scraping down the sides of the bowl as necessary.
6.  Reduce the mixer speed to low, and slowly add the flour mixture.
7.  Add the chocolate chips and mix until just combined.
8.  Using a cookie scoop or a tablespoon, scoop the dough onto the prepared baking sheets, spacing the dough about 2 inches apart.
9.  Bake the cookies for about 12 minutes, rotating the baking sheets halfway through the baking process.
10.  Remove from the oven, and cool on a wire rack.

Pinwheel Cookies






      Those are lovely and delicious Christmas Pinwheel Cookies. These cookies make a great project to do with children, so that they will have a nice plate of cookies to leave for Santa on Christmas eve with a tall glass of milk!

Ingredients:
1 cup softened butter
2 cups AP flour
1/2 cup brown sugar
1/2 cup granulated white sugar.
1 LARGE egg.
1 tsp vanilla extract.
1 tsp baking powder.
1/4 tsp salt
2 TBsp unsweetened cocoa powder.



How To?

1-In large mixing bowl cream butter and sugar together.

2-Add egg and vanilla and beat until light and fluffy.

3-Gradually add flour

4-Divide the dough into 2 equal portions; blend cocoa into one portion.

5-Form each portion into a ball..and refregirate for 2 hours, or freeze for 1/2 hour.

6-Place each ball between two sheets of waxed paper lightly dusted with powdered sugar or flour and roll each into a rectangle; carefully layer one color on the other. Starting at long edge, roll into a log.

7-Cut your log in half and wrap each portion up in plastic wrap. Refrigerate dough for at least 4 hours, or freeze for 2 hours

8-Cut in 1/4-inch slices and place on a greased baking sheet about an inch apart. Bake at 350° for 8 to 10 minutes.
hint..... this is how you can can cut your dough EASILY. use a piece of dental floss.





Biscotti Girandola

Ingredienti:
1 tazza di burro ammorbidito
2 tazze di farina 00 ( Il mulino Chiavazza)
1/2 tazza di zucchero di canna
1/2 tazza di zucchero semolato bianco.
1 uovo grande.
1 cucchiaino di estratto di vaniglia.
1 cucchiaino di lievito in polvere.
1/4 cucchiaino di sale
2 cucchiai di cacao amaro.

1-Con lo sbattitore elettrico, Mescolare il burro con lo zucchero.

2-Aggiungere l'uovo e la vaniglia .

3 Aggiungere poco a poco la farina.

4-A questo punto dividete il composto a metà, in una parte andrete ad aggiungere 2 cuchiai di cacao amaro in polvere . Impastate i due composti separatamente con le mani, velocemente per fare sciogliere il burro e ottenere due impasti lisci e morbidi .

schiacciateli leggermente con le mani e copriteli con della pellicola trasparente, dovranno rassodare in frigorifero per almeno un’ora, o congelare per 1/2 ora.Stendere quindi l’impasto bianco e quello nero  in due sfoglie rettangolari spesse circa 3 mm.

6.iniziare ad arrotolare la sfoglia, dal lato più corto. Coprire il rotolo con la pellicola trasparente e lasciatelo raffreddare in frigorifero per un’altra ora.  
7-tagliare delle “fette” di 1 cm di spessore con un coltello affilato o con l'aiuto di un filo ( come dimostrato nella foto). 
8-Mettete i biscotti così ottenuti sulla carta da forno e infornate a 180°C per circa 15/18 minuti.
