Lemon -scented Cornbread Doughnuts












Prepare your dry ingredients

Prepare your wet ones

Your batter.. after adding wet to try ingredients




Pour your batter into a plastic bag , snip its end with  scissors and grease your pan




Fill it ( half full ) only !


e VoilĂ  , after 8 minutes in my oven !!!



Prep Time: 10 mins  Cooking Time: 5 mins

Ingredients:
2/3 cup yellow cornmeal
1/3 cup all purpose flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
pinch of salt
1 egg (lightly beaten)
1  container of non fat yogurt around a cup.
1 tablespoon canola oil
2 teaspoons lemon juice
3 tablespoons granulated sugar
2 to 3 tablespoons butter. for greasing your pan.

Preheat the oven to 180  degrees C . In a large bowl whisk together all the dry ingredients. In another bowl stir together oil, lemon juice, egg and yogurt. Make a hole in the center of the dry ingredients and pour the wet ingredients into the hole. Gently fold everything together until combined.grease each cavity of the doughnut pan with some butter . Place half the batter in a small plastic bag and seal it. Cut a small hole in the corner of the baggie and pipe batter into the doughnut cavities on top of the butter. Only fill each cavity 1/2 way and before baking be sure to clean off any stray dough around the circle so there’s a hole in the middle of the doughnut.. for regular sized donuts cook fro 8 to 10 minutes. Let cool for a moment and then flip over onto a cooling rack while still warm.

Doughnuts Lollies

 Hello everyone...after a whole month of non blogging..I missed you, I missed my blog, I missed every good comment one of you once left me...I MISSED YOU GUYS.
This post was born today, a baby post....after a really bad week, I decided to have some fun in the week-end
especially that it is a long one.
And yes, you read the title correctly,,I made some doughnuts, no big deal but the fun is I made some lollies out of the left over dough( the rounded pieces in the middle)
                                                                        Ingredients
                                                               3/4 cup luke warm milk
                                                               2 1/2 TS melted butter
                                                                           1 egg  
                                                              2 1/2 ts active dry yeast
                                                                  1/4 cup fine sugar
                                                                           1/2 ts salt
                                                              3 to 3 1/4 cups of AP flour


                                                                        The Glaze
                                                             60 gm bittersweet chocolate
                                                                         2 TS milk
                                                                1/4 cup unsalted butter
                                                                     1 c conf. sugar  
                                                                      1 ts vanilla extract
                                                                     1 1/2 ts corn syrup       
 How to?
sprinkle the yeast over 2 Ts of hot water and 1/2 ts of sugar, let it stand for 5 minutes or until foamy.
In the bowl of your stand mixer, add your flour
+sugar ,mix
Add the egg+butter+milk +the yeast
 mix at low speed with the dough hook attached for 5 minutes.
cover and let the dough to proof for an hour or until doubled.

on a floured surface roll your dough into a large disc 0.5 inch thick.
cut with a doughnut cutter or any rounded cutter . and you can use a juice bottle cover to cut the small parts in the middle ( your lollies)

put your doughnuts on a baking sheet and cover it and let it rest for another 1/2 hour.

The glaze:

Put a saucepan on medium heat add your ingredients and whisk frequently until you got a smooth and silky look  .
