My Caprese Salad .. with a twist !

      Today I felt like eating salad for lunch , am not that kinda person by the way , yet , who can resist the Italian Caprese salad or as they call it here ( Inslalata Caprese ) ! 
It is usually served like the photo in the end of this post .. But I decided to put it into action and rock it a little bit !

You will need these plus some salt and you are done ! 

Chop em like this , add some salt and olive oil ... e VoilĂ  !

Sunset Salad

  It's been really a very tiring week and it is finally Saturday..Thank God it is Saturday...it doesn't mean that am working all week or anything, am a housewife :( and a mom of TWO:) ,today in Bologna is pretty hot and I wanted to eat something really refreshing and in the same time didn't wanna cook.;) so I've decided to make this new salad, it is new for me at least....I love italian rucola it is really heavenly good with balsamic vinegar..Yummy..Rucola or Arugula is an aromatic salad green. It is also known as rocket, roquette, rugula and rucola, and is popular in Italian cuisine,Like most salad greens, Arugula is very low in calories and is high in vitamins A and C. A 1/2 cup serving is two calories..I even growing my own now in the balcony!!

About the aceto balsamico or balsamic vinegar...it is originally made in Modena..a city not far from bologna where I live, you can find all about it here.
back to our salad...let's get to work.



Tossing the balsamico...Yummy.


Ingredients:
2 tomatoes. ripe but a bit hard.,diced
1 onion,diced
1 cup rucola
3Tsp canned sweet corn
1/2 a cup of your favourite cheese, I used Emmental ,you can use parmiggiano or cheddar.,diced
extra virgin olive oil, 2 TSp
Balsamic vinegar 2TSp
salt and freshly ground pepper.
Pinch of sugar.






How To:

In a large bowl, put the sweet corn  kernels and stir in tomatoes ,onion and rucola.
Add the cheese,toss with and oil ,,,right before serving add the salt and pepper,and a teeny tiny pinch of sugar. anf of course Vinegar. Enjoy.!!
